Bioactive Peptides from Soybean Hydrolysis using Protamex

ABSTRACT
Soybean meal, a co-product after oil extraction from seeds, is rich in protein. Dietary proteins can
be important sources of bioactive peptides with specific biological activities. As such, they can
potentially be used in the prevention and treatment of agerelated chronic diseases like
cardiovascular disease, cancer and obesity. Bioactive peptides have been defined as specific protein
fragments that have a positive impact on body functions and conditions and may ultimately influence
health. Main purpose of this research is to optimize favourable conditions such as water,
enzyme/substrate, pH, temperature, hydrolizing time to hydrolize bioactive peptide from soybean by
protamex enzymes so that the highest protein recovery can be achieved. The soluble protein recovery
by protamex is 33.91 ± 0.17%.
